What is Macau-Style Baked Portuguese Chicken Rice?

It’s a tasty and well-loved baked rice casserole recipe that is Asian-inspired! It’s egg-fried noodles, juicy chicken, and a delicious curry-coconut sauce with creamy, bubbling cheese. It’s an amazing dish that is a product of Macau, an ex-colony in Portugal (hence its name); however, the dish isn’t part of Portuguese food.

It is served in many Hong Kong-style cafes or “cha-cha-things.” You’ll usually find it alongside menu items such as Baked Pork Chop with rice, Baked Fish Fillet served with rice, and many more. This is among my husband’s favorite meals to enjoy at any Cha-Cha-Teng! We typically take it along with a hot cup of HK milk tea in the style of HK. It’s delicious and sweet, and you must try it if you love rice cooked in a pan. The perfect thing is that it can be made easily at home, and you’ll be able to reduce your cost by $15-20 and increase the portion size!

Ingredients

  • Chicken Thighs
  • Shredded Mozzarella Cheese

Fried rice:

  • Rice white jasmine
  • Eggs
  • Regular soy sauce
  • Neutral oil

Chicken marinade:

  • Shaoxing Wine or Dry Sherry Wine
  • Salt
  • Garlic Powder
  • Curry Powder

Coconut Curry Sauce:

  • Onion
  • Potatoes
  • Curry Powder
  • Whole Fat Canned Coconut Milk
  • Turmeric
  • Salt
  • Neutral Oil 

How do you make Macau-Style Rice Baked Portuguese Chicken Rice?

  • Cut the chicken thighs in half. Dress the poultry with Shaoxing cooking wine salt, garlic powder, and curry powder. Place aside to marinate while you prepare the remaining ingredients.
  • Peel and chop potatoes. Boil them in boiling water for 5 minutes or until they are fork-tender—strain and set aside.
  • Cook two tablespoons of vegetable oil in a massive skillet on medium heat. Add the cooked pieces into pieces. Add eggs and soy sauce to the pan. Mix all ingredients until the eggs are cooked. Transfer the rice to an oven dish that measures 9×13 and spread it out equally.
  • Bake at 500 ° F.
  • Cook one tablespoon of vegetable oil over high heat. Dice the onions until they soften. Add the marinated chicken thighs. Cook the chicken on each side for five minutes. Then add the cooked potatoes, coconut milk, curry powder, turmeric, and salt. Mix thoroughly.
  • Serve chicken and sauce over fried and uniformly spread rice. Sprinkle cheese over the top. Broil on the stove at 500 F for 5-10 minutes or until the cheese melts and turns brown slightly. Enjoy!

 

Storage & Reheating

  • The dish can last up to four days if stored in an airtight container in the refrigerator. To warm it, microwave for a few minutes or cook on the stove in a pan over moderate heat until hot.

 

Expert Tips

  • Let the chicken marinate in the seasoning for 5 minutes or so. This will improve its taste.
  • Don’t cut them into smaller pieces. Cut them into 1-inch cubes. If they are smaller, they will dissolve in the sauce.
  • Do not overcook the rice you fry. After the rice has been cooked and combined with eggs and the sauce, immediately transfer it to your baking dish.
  • Brown the chicken to add flavor. The browning process really enhances the flavor of chicken.
