Blueberry Bliss: 4 Exciting Recipes To Celebrate National Blueberry Month

July is National Blueberry Month, and it’s a perfect time to celebrate the sweet, tart, and nutritious blueberry. These little berries are full of antioxidants, vitamins, and fiber, making them a delightful addition to any meal.

In honor of this berry-licious month, we’ve curated five exciting recipes that showcase the versatility of blueberries. To start, let’s dive into the first recipe: a classic Blueberry Cobbler baked to perfection in ceramic cookware.

Recipe 1: Blueberry Cobbler

Ingredients

For the filling, you’ll need four cups of blueberries, a 1/2 cup of granulated sugar, a tablespoon of lemon juice, and two tablespoons of cornstarch.

For the topping, gather one cup of flour, 1/2 cup of granulated sugar, a teaspoon of baking powder, 1/4 teaspoon of salt, 1/2 cup of unsalted butter, and 1/4 cup of boiling water. You’ll also need a ceramic baking dish to bring it all together.

Instructions

Preheat your oven to 375°F (190°C). Combine the blueberries, sugar, lemon juice, and cornstarch, then spread the mixture evenly in your ceramic baking dish. Mix the flour, sugar, baking powder, and salt in another bowl, then cut in the butter until the mixture looks like coarse crumbs.

Stir in the boiling water. Spoon the topping over the blueberry mixture, spreading it out evenly. Bake for 35 to 40 minutes, which is when the topping is golden brown and the filling is bubbling.

Let it cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream or whipped cream for a classic treat.

Recipe 2: Blueberry Smoothie Bowl

Ingredients

To make this refreshing smoothie bowl, you’ll need a cup of fresh or frozen blueberries, a banana, 1/2 cup of Greek yogurt, 1/2 cup of your preferred milk, and one tablespoon of honey or maple syrup for sweetness.

To make the toppings that will add texture and extra flavor, gather some granola, chia seeds, almonds, a handful of blueberries, and sliced strawberries.

Instructions

Combine the blueberries, banana, Greek yogurt, almond milk, and honey in a blender until it’s smooth and creamy. If the mixture is too thick, add a bit more milk until you reach the consistency you want.

Pour the smoothie into a bowl smoothly. Arrange the granola, chia seeds, sliced almonds, fresh blueberries, and strawberries on top in an appealing pattern.

Recipe 3: Blueberry Pancakes

Ingredients

If you want to whip up fluffy blueberry pancakes, you’ll need 1 cup of all-purpose flour, two tablespoons of sugar, a teaspoon of baking powder, 1/2 teaspoon of baking soda, 1/4 teaspoon of salt, 3/4 cup of buttermilk, a large egg, two tablespoons of melted butter, and one cup of fresh blueberries. Make sure to have some extra butter or oil on hand for cooking.

Instructions

First, whisk together the dry ingredients in a large bowl. In another bowl, beat the buttermilk, egg, and melted butter until combined.

Pour the wet ingredients into the dry ingredients and stir gently until just combined; the batter should be slightly lumpy. Fold in the blueberries carefully to avoid overmixing.

Heat a non-stick frying pan or griddle over medium heat and lightly grease it with oil. Pour 1/4 cup of batter onto the pan per pancake.

Cook until bubbles form and the edges look set, then flip and cook until golden brown.

Recipe 4: Blueberry Spinach Salad

Ingredients

Summer is synonymous with salad, and this one can’t be beat. You’ll want four cups of fresh spinach leaves, one cup of fresh blueberries, 1/2 cup of crumbled feta cheese, 1/4 cup of toasted almonds or pecans, and 1/4 cup of thinly sliced red onion.

For the vinaigrette, gather three tablespoons of olive oil, two tablespoons of balsamic vinegar, a tablespoon of honey, one teaspoon of Dijon mustard, and a pinch of salt and pepper.

Instructions

Start by combining the spinach leaves, blueberries, crumbled feta cheese, toasted almonds, and red onion in a big salad bowl. In a small bowl, whisk  the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until well combined.

Pour the vinaigrette over the salad and toss gently to coat all ingredients evenly.
